RV Recipe: Gourmet Shrimp Scampi

Gourmet Shrimp Scampi

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • Salt and black pepper to taste
  • 8 ounces linguine or spaghetti, optional
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional, or adjust to taste)
  • 1/4 cup chicken or vegetable broth
  • 1/4 cup dry white wine (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese for serving

Instructions:

  • Season the shrimp with salt and black pepper.
  • If using, cook the pasta according to instructions; drain and set aside.
  • In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Add the seasoned shrimp to the skillet and cook for 1-2 minutes per side or until they turn pink. Remove the shrimp from the skillet and set them aside.
  • In the same skillet, add the remaining 1 tablespoon of butter and 1 tablespoon of olive oil. Add minced garlic and red pepper flakes, and sauté for about 1 minute until the garlic is fragrant.
  • Add the chicken or vegetable broth and white wine, scraping the bottom of the skillet to release any browned bits.
  • Return the cooked shrimp to the skillet. Add lemon zest and lemon juice. Toss everything together to coat the shrimp in the sauce.
  • Add the cooked pasta to the skillet, tossing it with the shrimp and sauce until well combined. Cook for an additional 1-2 minutes to heat through.
  • Garnish with chopped fresh parsley, if using, and grated Parmesan cheese.
  • If you want to cut the carbs, simply eliminate the pasta from this RV recipe. The shrimp can stand on its own without it!
