Fall Camping Recipe: Beef & Lentil Stew

Fall is my favorite season of year and one reason why is that it brings with it the best foods! There’s nothing like a hearty meal of comfort food in your new or used RV shared with your family on a chilly autumn night. Beef & Lentil Stew

Ingredients:

  • 2 tablespoons all purpose flour
  • 1 lb stew meat
  • 2-4 tablespoons cooking oil
  • 4 carrots, skinned and diced
  • 1 onion, diced
  • 1 celery stalk, coarsely chopped
  • 1 14.5 can petite diced tomatoes
  • 4 baby red potatoes, diced
  • 1 teaspoon minced garlic
  • 1 cup dry lentils
  • 32 oz container beef broth
  • 1 ½ teaspoon dried rosemary
  • Salt and pepper, to taste

Prep-ahead tip: do you ever have onions, carrots, or celery that go just a little soft before you can use them all up? Me too! Instead of pitching them, I chop them up and toss them in a food storage bag together and into the freezer they go. It’s a perfect blend-of-three that goes well in many soups and stews, and this one is no exception. You can also prep this veggie trifecta of awesomeness and store it in the freezer, too, so it’s ready to use when you make this recipe.

Instructions:

  • Lightly dredge the stew meat pieces in the flour. Set meat aside, discarding any remaining flour.
  • Heat the oil in a 6 quart soup pot or Dutch oven. Sear the beef on all sides until it’s browned (3-5 minutes). Don’t skip this step! A good sear at the outside locks in the juices and flavor. Remove meat from the soup pot and set aside.
  • Add the carrots, celery, and onion to the soup pot, cooking until softened and the onions are translucent. You can add a bit more oil if necessary to prevent sticking.
  • Add the can of diced tomatoes, lentils, beef broth, garlic, rosemary, salt and pepper to taste, and the prepared browned beef to the vegetables, stirring well to combine.
  • Simmer on low heat for 30-40 minutes, stirring occasionally.
  • About 20 minutes before serving, add diced potatoes. Cook until the potatoes are tender and serve.  

This is an exceptionally flavorful dish and the lentils are a total power ingredient that add flavor and bulk! Plus, cleanup is a snap since you make it in one pot.
